The taste of the Mediterranean – Spanish specialties according to the original recipe

Potato omelette


  • 4 potatoes
  • 8 eggs
  • Olive oil
  • Salt and pepper


Peel potatoes and slice it on circle. Then cut each circle into four parts. Fry them in hot oil until crispy. Add salt, add them to the bowl with scrambled eggs with a little salt. Fry the whole mixture in olive oil. This is great for both hot and cold appetizers.

Royal eggs


  • 8 eggs
  • 90 gr. butter
  • 30 gr. flour
  • 0.5 liters of milk
  • 1 dl sweet cream
  • 150 g of rice
  • 20 g grated Parmesan
  • 1 teaspoon spice
  • Lemon juice
  • Salt and pepper


Let the eggs be hard-boiled and peeled. Separately prepare bechamel sauce with 50 g butter and flour, fry very briefly. Add cold milk and spices, then cook it all and stir constantly for about 5 minutes, until the sauce thickens. Add a little lemon juice, pepper and sweet cream. Fry the rice in a separate bowl on the remaining melted butter. Add about 3 deciliters of water, add a little salt and bring to a boil. Then put it in a fireproof dish, arrange the hard-boiled eggs cut in half on it and pour the béchamel sauce over it.
